Didn’t think pantyhose were versatile? Shoulda been here this weekend. From poi spinning to soy milk straining, that nylon/spandex sheerness was busy and in the meantime I found the best homemade soymilk recipe I’ve ever tried. The dry beans were soaked overnight and drained (these measurements are for 1 cup of dry beans). They were then thrown into a pot of vigorously boiling water (4 cups) and baking soda (1tsp). After 5 minutes of blanching we rinsed the beans with hot water and threw them for another 5 minutes into another pot of boiling water and baking soda. Rinsed again. We then put the beans in a blender with 5 cups of very hot water and blended for 3 minutes to get a silky smooth, mushy liquid. We strained this through the pantyhose (you can use nut bag, cheese cloth or even a pillowcase) and then stirred vanilla and cinnamon into the liquid on a low heat. The leftover soy guts (okara) can be used for all sorts of goodies like okara veggie burgers or in quick breads. yum! Pantyhose aside we’ve had an electric week in the forest. Lots of afternoon showers, crackling lightning and puddles. Here we come summer.
